Chicken Quesadilla with a side of Salsa

Quesadillas are easy and a favorite of kids

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon taco seasoning
  • oil for frying chicken
  • 8 small flour totillas
  • 1 1/2 cups grated cheddar cheese
  • hot sauce (optional)
  • butter for frying Quesadillas
  • *sliced onions, peppers, etc (optional)
  • 1 cup MoonShadows Farm Chunky Garden Salsa
  • 1/2 cup sour cream


  1. In a skillet, heat oil on medium flame
  2. Spinkle chicken breasts with taco seasoning
  3. Cook until brown and cooked throughout
  4. Let cool a bit and dice
  5. In a large frying pan or on a grill, melt some butter over a medium flame
  6. Lay down a tortilla and put a layer of cheese, then a layer of chicken
  7. *If you would like to add some veggies (onions, peppers, etc.), brown them in the same pan as you cooked the chicken in and add a layer of them, too!
  8. Sprinkle some hot sauce (optional)
  9. Add another layer of cheese (the cheese on both sides "glues" everything together
  10. Add another tortilla
  11. Cook on both sides until golden brown and cheese has melted
  12. Remove from heat and cut with a pizza cutter if desired
  13. Serve with MoonShadows Farm Chunky Garden Salsa and Sour Cream
  14. Watch them disappear!
