Blackberry Jam Bars

Easy to make and delicious to eat, these Blackberry Jam Bars are great any time of the day.

  • 1 cup rolled old-fashioned or quick oats
  • 1 cup unbleached all-purpose flour
  • 1/2 cup light or dark brown sugar - packed
  • 1/4 teaspoon baking soda 
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter - cut these into 1/2-inch pieces and bring to room temperature
  • 1 cup MoonShadows Farm Blackberry Jam


  1. Preheat oven to 350 degrees
  2. Line an 8 x 8 pan with parchment paper or greased foil (to lift out after baking)
  3. In a bowl, combine oats, flour, brown sugar, baking soda and salt mixing until they are well integrated
  4. Using a mixer at low speed or a pastry blended, add butter pieces until you create a crumbly mixture
  5. Using 1/2 of this mixture, press it to the bottom of your pan
  6. Evenly spread the MoonShadows Farm Blackberry Jam over this layer
  7. Sprinkle the remaining mixture over the jam and lightly pat it into the jam
  8. Bake for 35-40 minutes until the crumbly top is a golden brown and the jam is bubbling
  9. Cool to room temperature
  10. Remove from pan and cut into bars.
