Blackberry Jam Bars

Easy to make and delicious to eat, these Blackberry Jam Bars are great any time of the day.

Ingredients
- 1 cup rolled old-fashioned or quick oats
- 1 cup unbleached all-purpose flour
- 1/2 cup light or dark brown sugar - packed
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup unsalted butter - cut these into 1/2-inch pieces and bring to room temperature
- 1 cup MoonShadows Farm Blackberry Jam
Directions
- Preheat oven to 350 degrees
- Line an 8 x 8 pan with parchment paper or greased foil (to lift out after baking)
- In a bowl, combine oats, flour, brown sugar, baking soda and salt mixing until they are well integrated
- Using a mixer at low speed or a pastry blended, add butter pieces until you create a crumbly mixture
- Using 1/2 of this mixture, press it to the bottom of your pan
- Evenly spread the MoonShadows Farm Blackberry Jam over this layer
- Sprinkle the remaining mixture over the jam and lightly pat it into the jam
- Bake for 35-40 minutes until the crumbly top is a golden brown and the jam is bubbling
- Cool to room temperature
- Remove from pan and cut into bars.
