Crab Quesadillas with Pineapple Salsa

Crab Quesadillas with Pineapple Salsa
Ingredients
1/4 cup chopped onion
1 teaspoon cooking oil
1/2 cup of drained, flaked, cooked crab meat
2 tablespoons of mayonnaise or salad dressing
1 chili pepper roasted, peeled and chopped
1/2 cup shredded cheddar cheese or Monterey Jack cheese
2 7" or 8" flour tortillas
2 teaspoons butter or margarine
1 cup of MoonShadows Farm Pineapple SalsaDirections
1. Cook onion in oil in a small sauce pan for 3 minutes. Remove from heat.
2. Stir in crab meat, mayonnaise or salad dressing, chili pepper and cheese
3. Spread half of the filling on half of one tortilla. Fold the tortilla in half; set aside. repeat with the remaining filling and tortilla.
4. Melt margarine or butter in a large skillet over medium heat.
5. Add the tortillas and cook, uncovered, for 2-3 minutes, turning once, or untill golden brown on each side.
6. To serve cut each quesadillas in 3 pieces. Serve with MoonShadows Farm Pineapple salsa on the side or spooned over each quesadilla.Yield: 6 servings

Ingredients
3 lbs boneless, skinless chicken breasts
1 jar of MoonShadows Farm Peach SalsaDirections
1. Coat bottom of crockpot with salsa.
2. Place chicken pieces on top.
3. Pour remaining salsa over chicken.
4. Cover and cook on low for 5-6 hours, until chicken is tender and thoroughly cooked (white throughout).Suggestion: For a variation, substitute any fruit variety of MoonShadows Farm Salsa and enjoy!.

Ingredients
1 (4 to 5 lbs.) fully cooked boneless ham, sliced 1/4" thick
2/3 jar of MoonShadows Farm Cherry Jam Preserves
1 tbsp. apple cider vinegar
pinch of ground cinnamon
pinch of ground nutmeg
dash of ground cloves
2 tablespoons of raisins (optional)Directions
1. Heat oven to 325°F. Overlap slices of ham in shallow baking pan; cover with aluminum foil. Bake 50 to 60 minutes, or until internal temperature reaches 140°F. 2. Combine jam, vinegar, cinnamon, nutmeg, and cloves in a small microwave safe bowl. Microwave on high for 2 minutes.
3. Arrange ham slices on serving platter. Spoon 1/4 cup glaze over center of ham. Serve with remaining warm glazeSuggestion: For a variation, substitute any variety of MoonShadows Farm Jam and enjoy!
