These breakfast sandwiches are slightly sweet. They are bound to appeal to everyone in the family....a whole new meaning to grilled sandwiches.
Ingredients
1/4 cup butter
1/4 cup flaked coconut
1/2 cup MoonShadows Appricot Jam
1/2 teaspoon ground cinnamon
12 slices of raisin breadDirections
1. In a bowl, mix butter and coconut.
2. Stir in jam and cinnamon.
3. Spread between slices of bread.
4. Grill on a greased skillet until golden brown on both sides.Yield: 6 sandwiches
Suggestion: For a variation, use other MoonShadows Farm Jams.

Ingredients
3 large eggs
1 Tablespoon milk
2 Tablespoons of MoonShadows Farm Chunky Salsa
1/4 cup grated Pepper Jack or Cheddar cheese
salt and pepper - to taste
butter for fryingDirections
1. In a medium mixing bowl, combine the eggs with the milk and a light sprinkling of salt and pepper. Beat until frothy.
2. Place a medium skillet over medium heat and melt the butter.
3. Pour egg mixture in the skillet.
4. When the eggs are almost completely set, spoon salsa down one side of the omelet and sprinkle cheese over the salsa. Fold the the empty side of the omelet over the side with the ingredients.
5. Turn off heat, cover skillet and allow omelet to set for 1 or 2 more minutes until cheese is melted.
6. Serve immediately with additional salsa on the top if desired.Yield: 1 omelet
Suggestion: For a variation, use other MoonShadows Farm Salsas.
