Old Fashioned Peanut Butter Cookies
It's hard to find a good peanut butter cookie now-a-days, especially with the glut of soft cookies on the market using high fructose corn syrup. Well, our peanut butter cookie will bring back those days when a cookie was a real cookie!
Ingredients
2 cups of MoonShadows Farm All Natural Peanut Butter (other types do not taste as good!)
2 cups white sugar
a pinch of salt
2 teaspoons baking soda
2 eggs
1 teaspoon vanilla extract
buttered cookie sheet
a medium bowl
a mixing forkDirections
1. Preheat oven to 350°.
2. Butter cookie sheet
3. In the bowl, stir peanut butter and sugar together until smooth.
4. Add the eggs, then stir in the vanilla, baking soda and salt.
5. With your hands, pick some dough and roll it into a 1-inch ball, and place it on the greased cookie sheet. repeat this until all dough is gone.
6. Use the fork and push slightly on each dough ball as to make a cookie-like shape, This will leave criss-cross grooves as is traditional with old fashioned peanut butter cookies.
7. Bake the cookies for 8-10 minutes, then remove from heat and let them cool for 5-10 minutes.
8. Pour some ice cold milk and enjoy!

Easy and fun to make, these Afternoon Ruby Tea Biscuits are great with a cup of tea or any time.
Ingredients
2 cups all pupose flour
4 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup vegetable shortening
3/4 cup milk
1/2 cup of MoonShadows Farm Strawberry or Raspberry Jam...or try Raspberry-Jalapeno if you want a little zingDirections
1. Preheat oven to 425°.
2. Measure the sifted flour, baking powder, sugar and salt and mix with a fork in a large mixing bowl.
3. Cut in the shortening until the mixture looks like coarse bread crumbs.
4. Add milk and mix into flour with the fork-but only until the mixture forms a soft ball.
5. Place the ball of dough on a lightly floured surface and knead it 12 times.
6. Rub some flour on a rolling pin and roll out the dough until it's about 1/4" thick.
7. With a large biscuit cutter cut circles, very close together, in the dough.
8. Use a straight downward motion and don't twist thecutter.
9. With the spatula lift half the circles, one at a time, onto the cookie sheet.
10. Arrange about 1inch apart. With a small biscuit cutter (smaller than the one used to cut out the biscuits) cut a hole in the rest of the circles to make rings and lift out the centers with the spatula.
11. Set these little centers aside. With the spatula place the rings on top of the large circles on the cookie sheet.
12. Put a teaspoonful of jam in the middle of each ring.
13. Bake the biscuits 12 to 15 minutes, or until puffed and slightly golden.
14. Take the cookie sheet from the oven.
15. Immediately lift the biscuits from the cookie sheet with the spatula.
